Chocolate chip / chunk muffins

Ingredients to make Chocolate Chunk Muffins


2 eggs

¾ cup castor sugar

1 cup milk

½ cup unsalted butter / olive oil

1 tsp vanilla extract

2 ½ cups all-purpose flour / maida (or a mix of maida and whole wheat flour)

1 ½ tsp baking powder

½ tsp baking soda

¼ teaspoon salt

2 tbsp cocoa powder

1 cup chocolate chunks / chips


Method of making Chocolate Chunk Muffins


Preheat oven to 180°C, on bake mode.


In a large bowl, sift together the dry ingredients - flour, baking powder, baking soda, cocoa and salt.


In another bowl, whisk the wet ingredients – cream the unsalted butter / olive oil and sugar, add eggs and whisk, stir in the milk and vanilla extract.


Pour the wet ingredients in to the flour mixture, all at once. Lightly mix with a whisk or spatula. Add chocolate chips / chunks and mix.


Drop / scoop the batter into muffin pan cups and bake for 18 - 20 minutes at 180°C, or until golden and cooked through.


I used the same recipe to make blueberry muffins: add 1 cup fresh / frozen blueberries or 3 tbsp blueberry preserve.
