1 tsp green chilli paste

½ tsp turmeric

1½ tsp garam masala

½ tsp red chilli powder

½ tsp black pepper powder

1½ tsp salt

Cooking oil for frying

For the curry

1 tbsp cooking oil

1 bay leaf

4-5 cloves
5-6 black peppercorns

2 tsp ginger garlic paste

1 tsp green chilli paste

½ tsp turmeric

4 medium sized onions, fried and ground to a paste

½ cup tomato puree

2 cups water

Fried kofte / koftas

Salt to taste

Method of making Lauki Kofta Curry

For the lauki koftas

Squeeze and drain excess water from the grated bottle gourd / lauki. Add besan and spices, mix all the ingredients well, form in to 1 inch balls and shallow fry on medium high heat till the lauki koftas are golden brown and cooked through.

For the lauki kofta curry

Add cooking oil and the whole spices on low heat allowing them to release flavour. Add ginger garlic and green chilli pastes. Cook these through on medium heat.

Add turmeric, let it cook for a few seconds and add the fried onions paste. Mix well and add tomato puree. Continue to cook this paste for a minute, stirring constantly.

Add water (1½ - 2 cups or enough to make a thick curry) and increase the heat. Let the curry come to a boil and cook for another 3 – 4 minutes, stirring occasionally. Here, you could also add a teaspoon of thecha for additional flavour.

Add fried lauki koftas to the curry and simmer for 3 – 4 minutes, allowing flavours to blend.

Garnish with fresh coriander leaves and serve with steamed rice or chapati / tandoori roti.
