Wait, don’t write this recipe off on reading pineapple and chicken together… this Pineapple Chicken is nothing like pineapple on pizza!

The sweet and spicy combo of flavours in Pineapple Chicken will set your taste buds tingling for sure! If you’re a fan of Orange Chicken, give this recipe of Pineapple Chicken a go. Or not, either way give Pineapple Chicken a chance to woo you!

Also, if you’re a fan of fresh, juicy pineapple slices topped with salt and red chilli powder, this recipe of Pineapple Chicken is for you!

And finally, if you're a fan of grilled pineapple, this recipe of Pineapple Chicken is for you!

The sweet and tart flavours of pineapple paired with juicy spicy chicken is incomparable and really something that must be experienced and not talked about… because, no words.

Pineapple Chicken is the perfect party snack… not much prep, ready within minutes and scrumptious! Which basically translates to; less time in the kitchen, low effort, super taste and pleasantly surprised guests! There’s really nothing that one won’t like about this recipe of Pineapple Chicken.

And… you don’t even need to marinate the chicken for this recipe, use it straight from the refrigerator. I like to use marinated chicken for most of my chicken recipes though and so, I did marinate it with a salt and peppers rub.

You may notice that I don’t use too many sauces to add flavours to my Indian-Chinese recipes. I tend to keep things natural and simple and use ingredients that are easily available to most of us. If you do have oyster sauce or other flavouring sauce in your kitchen / pantry, please go ahead and add it to the recipe for more flavour.

Serve this Pineapple Chicken with fried rice and hakka noodles and you have a complete meal!

For a vegetarian or vegan version of Pineapple ‘Chicken’, use paneer, tofu, cauliflower, TVP, soya nuggets or any protein of choice. And pineapple!

Looking for more appetiser recipes which effortlessly double up as a full meal paired with fried rice, hakka noodles, kanji pulao, thalipeeth and more? Here are a few of my recommendations from WhiskMixStir.

Serves: 2

Time taken: 10 minutes

Ingredients to make Pineapple Chicken

300 gm chicken, boneless and cut in to bite size pieces

1 cup pineapple pieces, bite size

1 tbsp cooking oil

1 tbsp ginger and garlic, finely chopped

1 tsp red chilli powder

1 tsp black pepper powder

1 tbsp Worcestershire sauce

1 tbsp tomato ketchup

1 tbsp light soya sauce

Salt to taste

Spring onion greens, to garnish

Sesame seeds, to garnish

Method of making Pineapple Chicken

I marinated the chicken with salt and half of the quantities of red chilli powder and black pepper powder for a couple of hours. If you’re short on time, skip the marination – this recipe of Pineapple Chicken is quite forgiving.

Chop the pineapple in to bite size pieces. I used fresh pineapple because that’s where the fresh tartness and natural sweetness comes from.

You could try this recipe with canned pineapple too. If I was you, I would rinse the canned pineapple pieces first to get rid of excess sugar. And add a little lime juice towards the end of the cooking process for fresh citrusy flavours. But that’s just me.

We start with heating the cooking oil in a pan on medium high heat. Add the marinated chicken pieces to the pan along with the finely chopped ginger and garlic. Do not stir for about a minute, to let the chicken juices seal in.

Add the Worcestershire sauce, tomato ketchup and soya sauce. Stir the chicken now to coat it well in the sauces. Continue to cook for another minute or two till the chicken is almost done.

Remember that this recipe of Pineapple Chicken uses bite size pieces of boneless chicken which hardly takes any time to cook. The lesser you cook boneless chicken, the juicier it will be.

Add the diced pineapple pieces and mix well to coat the pineapple with the sauces and flavours from the chicken.

Taste and adjust flavours and seasonings to your preference.

Cook for a minute more so the pineapple heats up and starts to caramelise and the sauces have coated everything nicely. Garnish with spring onion greens and sesame seeds and your Pineapple Chicken is ready to serve!

While this recipe of Pineapple Chicken tastes great by itself as an appetiser, you could also serve it as a side with fried rice and hakka noodles (recipes linked in the notes above).
