This recipe of Kairi Pani Puri Water is naturally gluten-free, vegetarian and vegan.
Makes 1 cup of Kairi Pani Puri Water mixture, which then makes about 3 litres of Kairi Pani Puri Water
Time taken: 10-15 minutes
Ingredients to make Kairi Pani Puri Water
For the mixture
½ cup raw mango slices / kairi
2-inch piece of ginger
8-10 green chillies
½ cup fresh mint leaves / pudina patta
½ cup fresh coriander leaves / dhaniya patta
For the Kairi Pani Puri Water
3-4 tbsp Kairi Pani Puri Water mixture
1 litre Water
1 tsp roasted cumin powder / jeera powder
2 tbsp sugar or jaggery
Salt to taste

Method of making Kairi Pani Puri Water
For the Kairi Pani Puri Water mixture
The way I do it is to first grind the raw mango pieces, ginger and green chillies along with salt to a rough paste. Next add the mint leaves and coriander leaves. I seldom add some coriander stems too; that’s where all the flavour is!
Add a little water, a couple of tablespoons if required to grind all the ingredients to a fine paste.
You could simply grind all the ingredients at once, if you like.
Remove the Kairi Pani Puri Water mixture in a bowl.
This mixture can be stored in an airtight glass container for a week to 10 days, refrigerated.
Making of the Kairi Pani Puri Water
When you’re ready to make your Kairi Pani Puri Water, add 3-4 tbsp of the mixture to a litre of water.
Add jaggery or sugar, roasted cumin powder and salt. Mix everything well and leave the water to cool in the refrigerator.
Remember that it takes a few minutes for the flavours to develop, so taste and adjust flavours to your preference after about 15 minutes.
And your stock of chilled Kairi Pani Puri Water is ready to serve!
