Not to be confused with Chicken Adraki Curry… this one’s an Indo-Chinese recipe. With a ton of ginger!


Perfect warming recipe for winters… Ginger Chicken is quick and easy to cook. A few ingredients brought together for this flavoursome chicken recipe.


For a vegetarian version of this recipe of Ginger Chicken, use paneer (ofcourse!) And for a vegan version, use cauliflower, tofu, soya nuggets or TVP of choice! Or simply use a mix of veggies to recreate your version of Ginger Chicken.


The flavours in this recipe are spicy, tangy, salty, mildly sweet with gentle heat from the ginger. This umami Indo-Chinese recipe of Ginger Chicken pairs delectably with vegetarian fried rice, hakka noodles and plain steamed rice even!

Ingredients to make Ginger Chicken


500 gm chicken, cut to bite size pieces

2 tbsp cooking oil

4 inch piece of ginger

8-10 cloves of garlic

4-5 green chillies

2 onions, medium size

2 capsicum or bell peppers, medium size

2 tbsp soy sauce

1 tsp vinegar

1 tbsp red chilli sauce

1 tbsp black pepper powder

Salt to taste

1 tbsp cornflour (corn starch)

1 cup water


Method of making Ginger Chicken


About the chicken


As you can tell from the cooking time, this recipe of Ginger Chicken doesn’t need marination. The quick almost-stirfry cooking process will develop some awesome flavours here!


You could use chicken on the bone or boneless, whichever you prefer. I usually prefer bone-in chicken as it makes for juicy chicken pieces in the final cooked recipe. I find boneless chicken slightly dry-er in texture. Your recipe, you choose!


Prep time!


Slice the onions - lengthwise or half-moons, whichever makes you happier. Slice the bell peppers too – again lengthwise or half-moons. For me, cooking is all about being happy! So, half-moons it is :)

Finely chop the ginger, garlic and green chillies.

Keep all the ingredients at hand, for quick cooking.


Let’s get cooking!


Heat cooking oil in a thick bottom iron pan or a wok, on high heat.

Add the finely chopped garlic, green chillies and half of the finely chopped ginger. Cook these aromatics for about half a minute and add the chicken along with a little salt and half of the black pepper.


Cook the chicken till almost done, say about 4 to 5 minutes, stirring often and then add the sliced onions and capsicum or bell peppers. Stir fry all the ingredients in the pan for another minute or so. Add the remaining finely chopped ginger along with the soy sauce, red chilli sauce and vinegar; mix everything well.


Make a slurry of the cornflour and water. Add this to the cooked chicken, onions and capsicum. Continue to cook the Ginger Chicken till the cornflour cooks through and everything comes together in a nice Indo-Chinese kind of sauce, about a minute.


Serve Ginger Chicken hot, straight from the wok. Pair it with steamed rice as seen here. This recipe of Ginger Chicken complements these recipes of Vegetarian Fried Rice and Hakka Noodles too.


Sometimes, or rather quite often, I leave out the cornflour slurry and serve Ginger Chicken as a side or small plates recipe. Do give it a shot!
