For when you need a quick fix yet wholesome start to the day… an easy to make meal at the end of a busy day… or a spicy side to go with simple dal tadka… Paneer Bhurji is sure a saviour.
Paneer bhurji, aloo bhurji and egg bhurji are popular North Indian breakfast recipes accompanied with plain salted parathas or bread. Paneer Bhurji can also be used as a sandwich stuffing for grilled or toasted sandwiches.

Serves: 2
Time taken: 10 minutes
Ingredients to make Paneer Bhurji
250 gms paneer (cottage cheese)
2 medium size onions
3 medium size tomatoes
2 green chillies, or to taste
1 tbsp grated ginger
1 tbsp cooking oil
1 tsp cumin seeds / jeera
1 tsp freshly ground black pepper
Salt, to taste
Method of making Paneer Bhurji
Crumble paneer in to largish pieces, not to a fine crumble. Chop onions, tomatoes and green chillies – rough chop again, not very fine.
Heat cooking oil in a pan / kadhai and add jeera. Once the jeera crackles, add green chillies and ginger. Wait till the ginger is partially cooked (should lose its raw flavours) and add onions. Sauté the onions for a minute or so, just till they change colour and add tomatoes.
Once the tomatoes turn a bit mushy, add the crumbled paneer along with salt and pepper. The onions and tomatoes will not be completely cooked, these should still have a bite. Mix well, taste and adjust seasoning.
Serve paneer bhurji hot with plain or ajwain parathas or bread.
