Chocolate chip / chunk muffins

Ingredients to make Chocolate Chip / Chunk Muffins
2 eggs
1 cup castor sugar
1 cup milk
½ cup unsalted butter / olive oil
1 tsp vanilla extract
1 ½ cups all-purpose flour / maida
1 ½ tsp baking powder
½ tsp baking soda
¼ teaspoon salt
3 tbsp cocoa powder
1 cup chocolate chunks / chips
Method of making Chocolate Chip / Chunk Muffins
Preheat oven to 180°C, on bake mode.
In a large bowl, sift together the dry ingredients - all-purpose flour, baking powder, baking soda, cocoa and salt.
In another bowl, whisk the wet ingredients i.e. cream the unsalted butter / olive oil and sugar till it's light and fluffy. Add the eggs one by one to the creamed butter and sugar. Whisk well each time. Stir in the milk and vanilla extract and mix well.
Pour the wet ingredients in to the dry ingredients, all at once. Lightly mix with a whisk or spatula. Add chocolate chips / chunks and mix. Don't over mix the chocolate chip / chunk muffins batter.
Scoop the batter into the muffin pan cups and bake for 15-18minutes at 180°C, or until baked through. That is, until a toothpick inserted in to the middle of the muffin comes out clean. If not, place the chocolate chip / chunk muffins to bake for a couple of minutes more.
I used the same recipe to make blueberry muffins: add 1 cup fresh / frozen blueberries or 3 tbsp blueberry preserve.
