Lauki Kofta Curry

These are bottle gourd (lauki) koftas in a light curry recipe and could be easily substituted with paneer, mutton / chicken kheema (mince) for a quick dinner…
The curry in this recipe of lauki kofta curry is a basic, no-fuss Indian curry. The curry of malai kofta or Nargisi kofta is richer with subtle flavours.

Time taken: 45 minutes to an hour
Ingredients to make Lauki Kofta Curry
For the Lauki Koftas
2 cups bottle gourd / lauki, grated
4 tbsp besan / gram flour
2 tsp ginger garlic paste
1 tsp green chilli paste
½ tsp turmeric
1½ tsp garam masala
½ tsp red chilli powder
½ tsp black pepper powder
1½ tsp salt
Cooking oil for frying
For the curry
1 tbsp cooking oil
1 bay leaf
4-5 cloves 5-6 black peppercorns
2 tsp ginger garlic paste
1 tsp green chilli paste
½ tsp turmeric
4 medium sized onions, fried and ground to a paste
½ cup tomato puree
2 cups water
Fried kofte / koftas
Salt to taste
Method of making Lauki Kofta Curry
For the lauki koftas
Squeeze and drain excess water from the grated bottle gourd / lauki. Add besan and spices, mix all the ingredients well. Form this lauki kofta mix in to 1 inch balls and fry them in medium hot oil on medium heat till the lauki koftas are golden brown and cooked through.
As always, if the oil is too hot, your lauki koftas will brown quicker and not cook through. If your oil is not hot enough, the lauki koftas will turn out quite hard and will soak in a lot more oil.
Note: before frying all the lauki koftas, do a taste test with one fried lauki kofta. If it is to your taste, go ahead and fry the rest. If not, make the required flavour adjustments and then fry the rest of the lauki koftas.

For the lauki kofta curry
Heat cooking oil in a kadhai and add the whole spices. Fry these for a few seconds allowing them to release flavours. Add ginger garlic and green chilli pastes. Cook these through on medium heat.
Add turmeric, let it cook for a few seconds and add the fried onions paste. Mix well and add tomato puree. Continue to cook this paste for a minute, stirring constantly.
Add water (1½ - 2 cups or enough to make a thick curry) and increase the heat. Let the curry come to a boil and cook for another 3 – 4 minutes, stirring occasionally. Here, you could also add a teaspoon of thecha or garam masala for additional flavour.
Also, if you don't have all the whole spices, simply skip those and add a teaspoon of garam masala at this stage.
Add fried lauki koftas to the curry and simmer for 3 – 4 minutes, allowing the koftas to soak in the curry and the flavours to blend.

Garnish with fresh coriander leaves and serve your Lauki Kofta Curry with steamed rice or chapati / tandoori roti.
