Tempered Potatoes
Also known as Jeera Aloo (this one is with an addition of coarsely crushed peanuts)
This recipe of tadka aloo or jeera aloo is an ideal meal for when you're fasting (vrat).
Boil potatoes, peel and leave them to cool. When ready to cook, chop the potatoes roughly in to bite size pieces. Next, a quick, simple tadka of jeera, green chillies and curry leaves that adds subtle flavours to the potatoes and is not heavy on the palate. This recipe of Tadka Aloo or Jeera Aloo is actually as simple as it sounds!
Now, you could add herbs, spices and seasoning to the boiled potatoes to your liking and make your version of Tadka Aloo. This recipe of Jeera Aloo is the one that works universally for Indian fasting (vrat / upvas), where one would usually eat fresh fruits and root vegetables for meals.
Serve Tadka Aloo with cucumber raita or a tadke wala raita to complete your vrat breakfast or meal.
You could also serve Jeera Aloo with upvas thalipeeth or rajgira (amaranth) tikkad, which is usually prepared in my home during Navratri fasting / vrat.

Serves 1
Time taken: 10 minutes
Ingredients to make Tadka Aloo / Jeera Aloo
2 potatoes
2 tsp ghee
½ tsp cumin seeds / jeera
6 - 8 curry leaves
1 green chilli, finely chopped (or to taste)
½ inch piece of ginger, grated (optional but yumm!)
Salt to taste
½ cup roasted salted peanuts, coarsely ground (optional but yumm!)
Method of making Tadka Aloo / Jeera Aloo
Pressure cook the potatoes for 2 whistles and let the steam settle naturally. Once cool, peel and chop the potatoes in to bite size pieces.
While the potatoes are left to cool (after pressure cooking), grate the ginger and finely chop the green chillies. Wash the curry leaves and keep everything ready as this is a quick recipe.
Heat ghee in a pan on medium flame, add cumin seeds and curry leaves.
When adding curry leaves to any tadka, always remember to stand back as the curry leaves will splutter.
Once these splutter, add ginger and green chillies. Allow the aromatics to release flavour, add chopped potatoes and salt to taste, mix well. Add coarsely ground peanuts and give it a good mix. Cook for another minute and your Jeera Aloo or Tadka Aloo is ready. Garnish with fresh coriander.
Serve tadka aloo hot with plain yoghurt, cucumber raita with or without tadka, kuttu atta roti, lauki ka thalipeeth… or as part of a Navratri Vrat Thali as below.
