Vegetarian Fried Rice

This recipe of Vegetarian / Vegan Fried Rice is the simplest quick fix recipe one can make using easily available ingredients.
If you don't have an ingredient or two from the ones listed in this recipe, don't worry... your vegetarian / vegan fried rice will still turn out great! All you need is rice, some veggies and then some more garlic & ginger. The sauces play an important role yes, but if you don't have them handy... no fuss.
Yes, this really is a no fuss recipe. And a very forgiving one too. Use any vegetables that are easily available to you, I used the ones listed in this recipe because I happened to have all these in the refrigerator... it's not a hard and fast recipe.
Sometimes and ofcourse when available, I like to add babycorn or mushrooms or broccoli to this recipe of Vegetarian / Vegan Fried Rice. Some other times, I like to simply add the basics... carrots and beans with a little salt and pepper, no sauce! Still tastes delicious!
You could also add some boiled or fried chicken to this recipe to make chicken fried rice or salted scrambled eggs to make egg fried rice.
I did tell you, this vegetarian / vegan fried rice is a super forgiving recipe.

Ingredients to make Vegetarian / Vegan Fried Rice
1 ½ cups rice, preferably soaked for an hour before cooking
4 cups lightly salted water
1 tbsp cooking oil
2 tbsp finely chopped garlic
2 tbsp finely chopped ginger
2-3 green chillies (adjust as per your preference) - finely chopped
1 medium onion or 2/3 spring onions - sliced
1 medium capsicum - sliced lengthwise
½ cup finely sliced cabbage
½ cup julienned carrot
2 tbsp light soy sauce
1 tbsp green chilli sauce
½ tbsp red chilli sauce
1 tsp black pepper powder
Salt to taste
Spring onion greens – chopped

Method of making Vegetarian / Vegan Fried Rice
Bring 4 cups of lightly salted water to a boil, add soaked rice. Cook till almost done, a little less cooked than al-dente (do kanni). Drain the rice (retain half a cup of the rice water) and keep aside to cool.
The rice should be slightly undercooked and completely cooled down so the grains don’t break and turn to mush while mixing with vegetables & sauces later.
Add cooking oil, chopped garlic and ginger in a pan and start cooking on medium low heat. Gently heat the garlic and ginger for a few seconds allowing the aromatics to release flavour and then add the green chillies.
I like to cook the ginger and garlic on medium low heat to slowly release their flavours in to the cooking oil. This results in well rounded sweeter flavours from these aromatics which in turn flavour the fried rice better.
If you like the heat from the chillies coming through in the recipe, add chillies to the cooking oil along with the ginger and garlic. For milder chilli heat, add it once the ginger and garlic are sautéed.
Lightly fry the aromatics, increase heat and add carrots. Sauté for less than a minute, add cabbage and sauté till it wilts a little. Add onions, sauté till they turn a light pink. Add capsicum, sauces, salt & pepper. Mix everything well and cook for a minute more.
Add the half cup of retained rice water and mix. Now, mix in the rice gently to avoid breaking the grains. The rice water is added here so that our Vegetarian / Vegan Fried Rice does not dry out in the cooking process.
Cover and cook for a couple of minutes to let the rice heat through and absorb all the flavours. Check seasoning and adjust as per taste.
Our recipe of Vegetarian / Vegan Fried Rice is ready to be served. Garnish with chopped spring onion greens.
