    Chicken Kebab Pulao

This quick chicken kebab pulao recipe is made using the same marinade as these mint chicken kebabs and complements it well. Make this recipe of chicken kebab pulao to go with your mint chicken kebabs for a complete meal. When I am not making a curry to round up my Indian meal, I like to serve this chicken kebab pulao with chicken kebabs, instead of chapati or naan. Chicken kebab pulao is also a great way of using up leftover mint chicken kebabs or roasted chicken too. Leftove

    Mint Chicken Kebabs

Or hariyali chicken tikka. A super simple chicken small plates recipe to put together and even easier to cook – BBQ it or just grill it on a pan… tastes great either way! You could add a handful of coriander leaves to this recipe of mint chicken kebabs or pudina chicken kebabs, for additional flavour. Add half a cup of spinach leaves to this recipe of mint chicken kebabs to make pahadi chicken kebabs / tikka. Marinate the chicken for atleast 4 – 6 hours, preferably overnight.

    Moong Dal Halwa

Nutty, warm, melt-in-mouth... the best! Moong Dal Halwa is a time consuming yet super simple recipe to make. The making of moong dal halwa requires a bit (or a lot!) of arm muscle work... be warned. My recipe of Moong Dal Halwa is slightly low on ghee - I have used half the quantity of ghee from that used in traditional recipes of Moong Dal Halwa - adjust the quantities of ghee and sugar as per your taste / preference. Moong Dal Halwa cooked as per the traditional recipe is l

    Urad Dal Kachori

Crisp, flaky flour shells (kachoris) filled with a spiced, mildly sweet urad dal mix - Northern India’s second favourite snack / street food, after samosas of course! A quick potato curry recipe to go with, turns these urad dal kachoris in to a complete breakfast, within minutes. You know your homemade urad dal kachori has turned out well when the shell or the covering is flaky and has a few layers, not like puff pastry though. The trick to getting this right is in the frying

If you're new to Indian cooking, here are a couple of raita recipes to get you started. Burhani Raita Cucumbe

    Kanda Poha

Traditional Indian breakfast, snack, meal… poha or pohe is light yet satiating food / meal for literally any time of the day! Poha or flattened rice flakes is made across India; with varied flavours and combinations... onions, peanuts, boiled potatoes, green peas, corn... all make for an interesting flavour profile to start your day with. We've all heard of the famous Indori poha, Nagpuri tarri poha (i.e. poha served with a curry)... this recipe of Kanda Pohe is that of Mahar

    Chicken Dum Biryani (kacchi style)

Kacchi style Chicken Biryani is prepared using raw, well marinated chicken. The chicken in this recipe is not cooked before layering the biryani and cooking it on dum. This is a simple recipe, with complex flavours, which does not require you to be in the kitchen all the time. Marinate the chicken a day in advance. Refrigerate the marinated chicken on warmer days / in warm tropical climates. When you're ready to cook the biryani, thaw the chicken by leaving it on your kitchen

    Lauki Kofta Curry

These are bottle gourd (lauki) koftas in a light curry recipe and could be easily substituted with paneer, mutton / chicken kheema (mince) for a quick dinner… The curry in this recipe of lauki kofta curry is a basic, no-fuss Indian curry. The curry of malai kofta or Nargisi kofta is richer with subtle flavours. If you're a fan of Indian curries, you may want to try these curry recipes too! Chilli Chicken

Chilli Chicken... anyone's favourite Indian-Chinese recipe. This recipe is something that spells comfort food for a lot of us. Put together a few basic ingredients, that are easily available at home, and you have a meal ready in minutes! Substitute chicken with meat of choice or paneer, mushrooms (love it!), soy nuggets, tofu, or a mix of other veggies even... and adjust the cooking time accordingly. The trick lies in slow cooking the onions and bell peppers, thus releasing t

    Batata Vada for Vada Pav

Maharashtra’s favourite all-day meal, comfort food, famous pretty much across the world - VADA PAV! The vada (or batata vada) is made of boiled roughly mashed potatoes tempered with spices and aromatics which is dipped in a thick besan (gramflour) slurry and deep fried. A lot of recipes call for the addition of garlic to the tadka for batata vada. I prefer to avoid it as there is garlic in the peanut chutney served along with batata vada too. You could surely go ahead and add

Tempered Potatoes Also known as Jeera Aloo (this one is with an addition of coarsely crushed peanuts) This recipe of tadka aloo or jeera aloo is an ideal meal for when you're fasting (vrat). Boil potatoes, peel and leave them to cool. When ready to cook, chop the potatoes roughly in to bite size pieces. Next, a quick, simple tadka of jeera, green chillies and curry leaves that adds subtle flavours to the potatoes and is not heavy on the palate. This recipe of Tadka Aloo or Je

    Stir-fried chicken

This recipe of stir-fried chicken is really just my take on a recipe somewhere between a chicken pepper fry and chilli chicken. A simple, no-frills recipe of stir-fried chicken with minimal everyday ingredients. If you don't have all the ingredients to make this stir-fried chicken, simply skip that ingredient and go ahead with the recipe. Or substitute it with something else. Like, if you don't have garam masala or chicken masala, use a fresh blend of available whole spices -

    Vegetarian Fried Rice

This recipe of Vegetarian / Vegan Fried Rice is the simplest quick fix recipe one can make using easily available ingredients. If you don't have an ingredient or two from the ones listed in this recipe, don't worry... your vegetarian / vegan fried rice will still turn out great! All you need is rice, some veggies and then some more garlic & ginger. The sauces play an important role yes, but if you don't have them handy... no fuss. Yes, this really is a no fuss recipe. Pindi Chole, with a twist

Traditional / authentic pindi chole are made using anardana (dried pomegranate seeds), for a bit of tang & flavour – no tomatoes. I twisted the recipe a little and added a couple of tablespoons of yoghurt, cooked down completely to add texture – something I picked from the Madra Rajma recipe of Chamba (Himachal Pradesh). **Even though this may be a lengthy recipe to read, it IS a simple one to work with :) To make a vegan version of this recipe of Pindi Chole, add vegan yogh

    Instant Jalebi

This is an instant jalebi recipe, not the traditional recipe that calls for a few hours of fermentation. Instant jalebis are ready in about 25-30 minutes. Jalebi also happens to be one of my favourite Indian desserts, tastes best when eaten with chilled milk – also a festive dessert for me, given as “prashad” on Lakshmi Pooja (Diwali) day in our home. Jalebi traditionally makes for a great breakfast option, with warm milk, masala doodh or yoghurt, even poha. Jalebi with rabri

A, Indian breakfast recipe that is really an all-day snack option – much like Vada Pav and Poha. Bread Pakoda is also a famous street food across Northern India. This one is a basic recipe of Besan ka Toast / Bread Pakoda, easy to modify as per your taste: make a mint (pudina) chutney sandwich, dip it in the besan mix and fry. stuff the potato mix used for aloo bonda / batata vada between two slices of bread, dip it in the besan mix and fry. place a slice of paneer or a coupl

Thecha (green chilli & garlic chutney)

Thecha: a rustic Maharashtrian “chutney”; super versatile and can be added to anything from bhel to mutton or chicken curry to bagara baingan to kothimbir vadi dough for an extra kick of flavour... thecha makes a flavourful accompaniment to the simple Maharashtrian breakfast Thalipeeth, or just as a condiment to fire up up a basic dal chawal. Psst... I eat thecha with potato chips even! *ahem* A couple of other Indian condiments that easily double up as chip dip: Burani Raita

This recipe of Chilli Cheese Toast could well be labelled as one of “my favourite foods”, besides of course many many other recipes!
